Chocolate Molten Lava Cake - For 2
- 1/4 c. semi-sweet chocolate chips
- 2 Tbsp butter
- 1/2 c. powdered sugar + extra for optional garnish
- 3 Tbsp all-purpose flour
- tsp vanilla extract
Preheat your oven to 400° F. Generously grease 2 ramekins with non-stick cooking spray, place on a baking sheet and set aside.
In a medium, microwave-safe bowl, melt the chocolate chips and butter in the microwave, checking every 15 seconds and stirring until smooth. Add the powdered sugar, whisk, then the egg and whisk until smooth. Stir in flour and vanilla extract and mix until batter is smooth.
Evenly distribute batter into the two prepared ramekins and place into the oven. Bake 12 minutes, or until cakes are set on the outside. Remove the cakes from the oven and let them rest for 1 minute before carefully inverting onto a plate. Dust with powdered sugar (optional). Serve hot.
